The anticipation is building for the upcoming Eastbridge Town Center, along MLK & Havana St., in Stapleton’s Eastbridge neighborhood. City Street Investors and Evergreen Development are poised to welcome a popular list of local restaurant tenants.
The Kitchen Next Door, and a yet-to-be-named restaurant owned by the award-winning Chef Lon Symensma, will join Eastbridge Town Center’s impressive chef lineup inclusive of Troy Guard’s previously announced Los Chingones Mexican restaurant.
These next two restaurants will complement the Stapleton community’s love of supporting local businesses. With The Kitchen Next Door’s “Community Through Food” philosophy—“[they] believe that gathering around the table and sharing good food and drink is what connects us as family, friends and a community…” (thekitchen.com). This approachable foodie locale will occupy a 3100-sqaure-foot space where diners can look forward to the delicious pub food in a casual atmosphere. Plus, it’s an added bonus that The Kitchen Next Door has received numerous accolades including being named one of Boulder’s Top 10 restaurants by The Culture Trip.
Of course, Chef Symensma also brings some highly celebrated ratings as he is known for his Asian Bistro, ChoLon in downtown Denver. In 2011, ChoLon was a James Beard Finalist for Best New Restaurant in America. Chef Symensma’s new restaurant coming to Stapleton will be an American concept with New York City flair – where the menu changes as the day progresses. Restaurant guests will enjoy breakfast entrees and juice in the morning, soup and sandwiches for lunch, and something chic for dinner. Additionally, the restaurant will feature two patios, accommodate 100 seats and occupy 3000-3500 square feet of space.
These dining options will be joining over fifty restaurants already operating in Stapleton.
